Confession: I do not like mushrooms, but I stinking LOVE these!! It’s really the only way I can eat them! Ha!
I do not have a very specific recipe for these. It really all depends on how many you want to make. For one small carton of white mushrooms, I use one pepper, one onion, and about six to eight jalapeno slices. If you want to make a couple of cartons, it would be super easy to adjust.
So here is the ingredients that you will need….
- White mushrooms
- Green bell pepper
- Red onion
- Pickled Jalapeño’s
- Creole seasoning
- Italian Dressing
You will also need plenty of toothpicks.
Clean and pop the steams out of your mushrooms. Finely chop peppers and onions (They need to be teeny tiny, so I found using a food processor works great for this!). Using a small spoon, fill the cavity of your mushrooms with the onion/pepper mixture and place them in a baking dish. Sprinkle with creole seasoning. Wrap each mushroom in a half of piece of bacon and secure with a toothpick. Pour the Italian dressing over the bacon wrapped mushrooms and let marinate, covered, in the fridge for about an hour.
These mushrooms are best cooked on the grill! You just need to make sure you get the bacon completely cooked on all sides. You can also bake them on a cookie sheet with a rack or I have a friend that even microwaved hers when she had a craving!! Haha! I also wonder how they would do in a air fryer.
